Here's a breakfast muffin that will knock your socks off! These were moist and buttery and oh just so delicious. My co-worker Patty Cake (when I hit the powerball I'm financing the shop for her) made these for me post birthday and WOW! Here's the ingredients (Pat your the best):
Muffin mix:
1 1/4 stick unsalted butter (melted) [butter substitute]
1 3/4 cup all purpose flour
1 teaspoon baking powder
1 1/4 teaspoon ground cinnamon
1 large egg [egg substitute]
1/4 teaspoon salt
1/2 vanilla bean (split and scraped)
2/3 cup sugar [Splenda or Equal]
2/3 cup milk (at room temp)
1 1/4 cup fruit (I prefer blueberries, but Pat made blueberries and cranberry)
Preheat oven to 400. Combine dry ingredients and whisk. In a medium bowl combine butter, vanilla bean, sugar, milk and egg and whisk to combine. Fold butter mixture and fruit into flour; use no more than 10 strokes. Spoon 1/4 cup of batter into each prepared muffin cup; press 2 teaspoons of streusel mix (below) on top of each muffin. Bake until tops are golden or 15-17 minutes. Remove from oven and let cool in pan for 15-20 minutes before transferring to rack.
Streusel mix:
5 teaspoons butter soft [butter substitute]
2/3 cup flour
2/3 cup confectioners sugar [use less]
1/4 teaspoon ground cinnamon
Combine all in a bowl, mix until moist and crumbly.
